If the color starts getting to dark, and you want to keep a mahogany bark, you can lay a piece of foil on top as a tent not wrap just to prevent heat from hitting directly on the ribs, but without that moisture that foil wrap adds. I have not been to the restaurant but used them for catering a work lunch and it was amazing!! I also had some Pork Ribs in the freezer so thought I would do those as well. For my taste 6 hours is much too long on a kamado. If so, did it work?
